      Ensamble

      2 oz. Bozal Ensamble

      1 oz. Fresh Lime Juice

      .5 oz. Agave Nectar

      Build Bozal Ensamble Mezcal, fresh lime juice, agave nectar and ice in shaker tin. Shake for 7-8 seconds and strain into a double rocks glass over ice. Garnish with a black salt rim and a dehydrated citrus wheel.

      1 oz. Pasote Blanco Tequila

      1.5 oz. Bozal Ensamble

      .25 oz. Aperitivo Liqueur

      .75 oz. Passionfruit Syrup

      .5 oz. Fresh Lime Juice

      1 oz. WTRMLN Juice

      Combine all ingredients, shake with ice and strain over large ice cubes in a glass rimmed with Tajin and sesame seeds.

      1.5 oz. Bozal Ensamble

      .75 oz.  Yellow Chartreuse

      .5 oz. Barrow's Intense Ginger Liqueur

      .25 oz. Agave Syrup

      Hot Water

      Combine all ingredients in mug except garnish. Pour hot water into mug then add cinnamon stick and lime wheel with clove and serve.

      2 oz. Bozal Ensamble

      4 Strawberry Slices

      .75 oz. Lime Juice

      .5 oz. Agave Syrup

      3 dashes Yuzu Bitters

      Build in shaker tin with Bozal ensamble, strawberry slices, lime juice, agave syrup and bitters. Use a wooden spoon or muddler to smash/muddle everything together. Add ice,cap with other side of tin and shake vigorously for 10 seconds, double strain with a Hawthorne strainer through a fine strainer over ice cubes in double old-fashioned glass. Then garnish with a whole strawberry on the rim of the glass.

      2 oz. Bozal Ensamble

      .75 oz. Cardamom Syrup

      .75 oz. Lemon Juice

      4 dashes Mole Bitters

      1 Egg White

      Chill coupe glass with ice water. Build mezcal, cardamom syrup, lemon and bitters in shaker tin. Add egg white in a smaller tin. Combine tins together with 2 ice cubes and dry shake vigorously for 10 seconds. Uncap, add ice, cap and seal again and hard shake for 10-12 seconds. Dump your ice water from your coupe and double strain with a Hawthorne strainer through a fine strainer into your chilled coupe.
